10 minute tacos


Super easy and cheap meal that I whipped up for lunch:
Ingredients
1 can of black beans, drained
1/2 can of Mexican corn mixture (small can)
2 teaspoons cumin
salt to taste (haha, I was cautious with this!)
1 garlic clove, chopped
1/2 lime
chopped red onion (to taste)
sour cream
salsa
chopped tomatoes and lettuce
chopped scallion (1)
chopped cilantro (as much as you want)
1. Heat cooking spray in pan
2. Stir fry onions, corn, black beans, garlic, cumin and salt, green onions (scallions)
3. Add lime and cilantro
4. Scoop into taco shells (I preheated mine in the oven) and top with lettuce, tomatoes, salsa and sour cream
ENJOY!

For brunch, I tried out Bobby Flay's asparagus and fresh pea frittata with tomato-basil concasse.
I made a couple of tweaks:
I used 4 eggs and 4 egg whites
I scrapped using oil in the pan and used cooking spray instead
UNFORTUNATE TWEAK: I didn't read the full recipe and didn't realize that concasse basically means topping...So, I thought that it was going to go into the eggs. When it called for salt, I added one teaspoon. Well, needless to say it was a bit, I mean VERY, salty. Good news is that it was easy, so I can make a fresh batch for tomorrow's left overs. Try this recipe out, it is very tasty.
How to Blanch asparagus
I didn't even know what blanching was until I googled it.
1. Boil water
2. Place asparagus in water for four minutes.
3. Remove and place in a bowl of ice water until you are ready to use it.

Quality time with the little guy

Liam's confirmation went really well--it was Jamie, my parents, Sejin, Susan McGeough, Cheryl Forbes and myself. The priest was really sweet with him and as soon as he started the sacrament, Liam was all smiles and keep smiling throughout the entire day. Nana had set up a cute reception--fruits, veggies, dip, carrot cake and key lime cake--yummy! The day was a lot of fun and the little guy stayed awake the entire day! No desating either:)

After the festivities, he took a little nap on his tummy before gearing up for round two of hanging out.

Snack On the Go - Vivanno Shake


Last week, I drove to VA for Liam's confirmation and found myself stopping at Starbucks for my favorite "fast food" break. The Vivanno shake contains a whole banana, protein and fiber powder and either strawberry puree or NAKED orange and mango juice. I get mine with soy milk and Lovelovelove this drink. So tasty, less than 300 calories and it has about five grams of fiber. Not a bad option while on the road:)
